This classic minestrone soup recipe is healthy and easy to make.
Ingredients (6 servings)
½ cup onion
2 cups of potato cut into squares
1 1/2 cups of brown rice
1 cup of green beans
1 ½ liter of vegetable broth
½ cup of cut parsley
2 cups of peppers
1 cup of carrot
12 ounces of chicken breast or turkey
1. Cut the potato, carrot, peppers, parsley, onion and chicken breast or turkey.
2. Prepare vegetable broth.
3. Cook the brown rice.
4. Add the vegetables and tubers to the vegetable broth that take longer to cook like potatoes and carrots.
5. Incorporate the other ingredients such as peppers, green beans and parsley.
6. On a plate, serve the vegetable broth with the cooked ingredients, add ¼ cup of brown rice to each serving and 2 ounces of chicken breast or turkey.
The minestrone soup is an italian soup made with seasonal vegetables. There are many versions. Replace the rice with pasta or quinoa. It can be made completely vegetarian without meat (chicken or turkey).
